This month, I was challenge by The Recipe Redux to make a lucky food.  The idea that food can be lucky and that people specifically make lucky foods to start their new year was completely foreign to me, but I could definitely use some luck in my life.  I’ve had an all around challenging year with my house, my health, and my kitties, so I’m hoping a little bit of lucky food can help turn it around for next year. Apparently I decided Wednesday was a Kelly holiday and took the day off from posting. Oopsies! While I normally post every Monday, Wednesday, and Friday, I really feel no obligation to keep to a schedule — especially with all of the holiday obligations this time of year.  Anyone else like that? When we were on vacation, all I wanted the whole time was Mexican food.  On the cruise ship I couldn’t really demand whatever kind of food I wanted, and I wasn’t about to search out a Mexican restaurant in Jamaica, but I had a little control in Florida.  I asked everyone who looked like they lived there for a recommendation for a good Mexican restaurant, and you know what I got?  NOTHING!  Not sure if Floridians hate Mexican food, but not one person could even name one Mexican restaurant, unless you count Chipotle (and I most certainly do not!). Since getting home, I’ve made a lot of my version of Mexican food and apparently, I’m really into enchiladas lately.  Homemade enchilada sauce is just too jammin` to leave it to...


Despite the fact that I haven’t finished raking the leaves in my yard, we have a solid layer of snow on top.  The only thing that keeps me moving forward is that as the weather gets colder, the beverages get hotter.  I’ve always been a sucker for hot chocolate, tea, coffee, anything warm and delightful, but it’s a real downer having to skip the marshmallows on top (except on the rare occasion I get my hands on vegetarian marshmallows).  When I saw amazing looking chocolate chip marshmallows this season, I knew something had to be done to keep me from going crazy with envy. What do you look forward to when you get back from a vacation?  Is flying home on your birthday only to discover that you have to throw away everything in your fridge and freezer?  Because that’s what I got. There were some bad storms in Michigan while I was gone and the power was out for several days. I couldn’t very well share a gingerbread spice mix and not show you a billion ways to use it, now could I?  When I was drinking/spilling the gingerbread latte that inspired the mix recipe, I was also eating an incredibly disappointing scone.  Scones are my jam, people, I can’t just ignore them when they sit looking all delicious in a glass case.  But when disappointment scones strike, I (like any sane person in the world) feel compelled to make a million perfect scones for myself. Normal scone recipes use a lot of butter, but not mine!  No butter here.  Frankly, I’ve forgotten how to use butter.  No joke, at this point when I try to make “traditional” cookies with butter from the simplest of recipes, I get a big mess. ...
