Desperately seeking hairdresser.  I’ve lived in my current town for three years and am yet to find any sort of cosmetologist I like.  If you add that to the four years I spent in university, you’ll soon realize that my hair has been a hot mess for the last 7 years.  I had a friend who went to a fancy pants cosmetology school and through college she would give me fantastic hair cuts and tints when I happened to see her, which would hold me over through the bad haircuts in between.  Unfortunately (for more reasons than just my hair) said friend now lives a handful of hours away with her husband and baby, and that can only mean no time for road trips just because I’m having a bad...

Challenging myself and Josh with a gluten free week has been pretty amazing. I haven’t had any revolutionary health improvements, but I knew I wouldn’t because I’ve had gluten sensitivity tests, including a pretty conclusive stomach biopsy. The major benefit of gluten free week is it’s forcing me to cross off a bunch of foods from my blogger bucket list. The item at the tippy-top of the list? Cauliflower crust pizza. I’m sure everyone has seen this recipe everywhere already. It’s all over Pinterest and I know a lot of bloggers that have posted about it. But how could I not? A wholefoods way to make a pizza crust which includes a hidden veggie! Check the blog title. Can’t resist. Rather than re-invent the wheel, I went to Hannah’s blog...

Friday! Friday! Friday! I don’t know about anyone else, but I am just so drained lately.  I really miss being in school and getting the whole summer off and a solid two weeks++ for Christmas and New Years.  I keep day dreaming about a billion different vacations I want to take at the end of the year but am having trouble committing to anything.  Vegas? Mexico?  Or just laying around my house for a week?  All sound so good and I’m jealous of my future self! But for now I’m working and coming home and making delicious dinners.  I’ve been taking advantage of the fact that peppers aren’t their usual prices of $1+ each and eating them by the bucketful.  My favorite way to eat peppers? Pretty much anyway I...

**Don’t forget to enter the Udi’s Gluten Free giveaway! Ends TONIGHT!* True story, I have no idea what a real meatball tastes like.  I’m not certain I’ve ever eaten a real meatball even before quitting meat at age 11.  All I know is meatless meatballs are where it’s at.  These have been a staple at family gatherings my entire life.  Granted, the family recipe is fried and doesn’t use  mushrooms or flax eggs, but I find this healthier version to be just as comforting.  Bonus points because baking = a million times easier than frying and your house doesn’t smell like oil for weeks. Over the last 24 years, I’ve eaten these meatballs a million different ways, and I encourage you to do the same!  Throw them in a slow cooker with...

Wow, what a busy weekend.  My sister was in from Seattle for a wedding shower, so I’ve been visiting with family and eating everything in sight.  I have had pizza THREE times this weekend.  Three! If you follow me on Twitter, then you might’ve noticed that I went to a Tigers game in Detroit this weekend.  Josh had never been to a professional baseball game, and I’m pretty certain he had never been to any major league sporting event.  Baseball games lead to veggie hot dogs (yes! They had them. So excited) and then after the game we went to Greektown for a pile of tasty Greek food.  Needless to say, I need a little better eating in my life this week. Enter these tasty, tasty scones.  The recipe will look shockingly familiar if you’ve seen my...

If you haven’t entered the Udi’s Gluten Free giveaway, go do it noowwwww.  Whether you’re gluten free or not, they have some great stuff worth trying out.  Today’s recipe is something I’ve actually been making for years.  I haven’t always added the veggies on top, but I love the texture it adds and who doesn’t want more veggies in their life? This dip comes together in a flash, can be eaten at pretty much any temperature, and is loved by everyone in their right mind. This makes a good appetizer for 4 people or a light snack for 8.  Double it if you’re feeding a hungry crowd, because you’re going to want a big pile of this. Let me just tell you real quick: the cream cheese layer in this...

**This giveaway is closed and the winner has been notified** I know I’ve been teasing you guys for weeks with this giveaway, but it’s finally time! Udi‘s sent over a HUGE box of gluten free goodies, and I’ve been working my way through them.  You’ve been seeing some of the stuff pop up on the blog with new recipes, like the gluten free lasagna pizza or yesterday’s vegan beef and avocado quesadillas. I also made one of my older recipes, sweet and savory lentil joes. And devoured many just plain in my hand, like these coconut peanut butter cookies.  I’ve tried probably 5 times now to recreate these cookies and I can’t even come close – they’re that good! While I do not stick to a gluten free diet, my...

Thanks for everyone’s kind words over the last week or so.  I’m feeling great, Josh is doing well, and Chester is just about to his normal self.  A secondary problem when I don’t feel well is that I start to spiral into some pretty bad eating.  Because cold water made my tooth feel SO much better, I’d been eating my weight in a lot of ice cream.  Bad eating = feeling yucky on top of already feeling yucky, so I’ve been cleaning up my act with some tasty vegan noms. I probably say this every day of my life, but tacos are amazing.  I make some sort of taco at least once a week.  One glorious week, I made them 3 days in a row.  The beauty of tacos is how...

Sorry I’ve been gone, I still have tasty food coming up for you soon and the Udi’s giveaway I’ve mentioned no less than 80 times (I’m super excited! Sorry, not sorry).  I normally only really talk about food, but let me vent my super awful week, k?  Wednesday was a particularly awful day.  I had to go to the orthodontist, but I don’t really mind that.  The real problem was my cat Chester had some sort of eye infection and I had to rush from work, to the ortho, grab Chester, and run all the way across town.  Josh kipped the vet because he had a migraine and by the time I got home, he was in rough shape.  Right around bed time he started shaking and couldn’t form real...

I seem to be a big fan of stuffing cheese inside of things.  Until a week or so ago, this was limited to savory recipes but when I made the base of these cookies and they were lacking a little something, I knew a sweetened cream cheese was the answer.  The cookie part actually came to be when I was trying to make some kind of cookie cup, and instead just made a delicious mess.  I’ll get it one of these days, so I can fill them with ice cream or fruit or pudding or any of a million delicious ideas floating around in my head.  But for now, these stuffed cookies are tasty enough to keep my interest. This is kind of an odd selling point, but they remind me...
