So. I was MIA again this Wednesday but for good reason.  I was working hard to put together a fantastic recipe to go alongside my first ever giveaway!  The folks over at Superior Touch were nice enough to shell out TEN jars of their Better Than Bouillon bases for a giveaway – that means FIVE people will each win 2 jars.  Not bad for my first one, right?  I’ve been a fan of the No Beef/Chicken (certified vegan!) bases for a long time, as evident by my three recipes already containing the bases, so I’m very happy to get to share them with you 🙂  Enter below in the Rafflecopter (it might take an extra minute to load). Winners will get to pick the two flavors they’d most like to try...

If you couldn’t tell from my bananas foster oatmeal or any of my decadent pancakes, I’m a big fan of dessert for breakfast.  If I have leftover cake or any cookies laying around, I will devour them before I’m even fully awake.  This is triply true on a Monday! One of my absolute favorite desserts is a strawberry malt, with several extra scoops of malt powder.  I noticed I had a large bag of frozen strawberries in the freezer that were on their last leg and knew I had to do something with them to prevent me from making a million milk shakes.  My favorite thing about the weekend is seeing just how lazy I can be, so I immediately reached for my slow cooker.  Throw everything in, go to...

It’s Friday! I totally forgot about Wednesday until I got out of the shower and Josh yelled to me, “Did you know today is Wednesday?  You didn’t put anything together for your blog.”  Yeaaahhh, well… Oops?  This week has just felt so weird.  I just know you were all sitting there anxiously waiting on Wednesday for a recipe that never came, so… Sorry!  I’ll try to do better next time.  Luckily this isn’t homework and no ones going to knock me down a letter grade for missing the deadline 😉 One thing I can’t forget?  This Brussels sprouts recipe.  A few weeks ago, I tried Brussels Sprouts for the first time in a vegan mac and cheese.  All I’ve ever heard is how gross they are and what a weird...

*Pictures Updated on 8/15/13* Bound to happen once in a while – a recipe with no fruits or veggies 😉 I very rarely buy bread at the store anymore.  Not only do I obviously find it fun to make and bake bread, but there are just so many weird, unpronounceable ingredients thrown in to store bought bread.  Home made bread doesn’t last as long as store bought for that same reason, so I find myself making a new loaf every few days or freezing bread to pull out later.  Though I have a bread machine which I think is absolutely fabulous, sometimes you don’t want to wait 3 hours to have a slice of bread!  I’m also finding it near impossible to find a 100% whole grain recipe for the...

Finally!  A recipe that isn’t all about cheese, cheese, cheese!  I have made these muffins twice this week.  I’ve been eating them for breakfast, dessert, snacks… pretty much all times of the day.  Best part?  They’re loaded with fruit while tasting crazy indulgent and being oh-so-fluffy. After Easter and my cheese-pocalypse, I desperately needed some whole grains and some fruit injected into my diet (please don’t remind me about all the candy I’ve been inhaling – what am I supposed to do with a solid chocolate bunny??).  These bad boys classy ladies are just what I needed to get back on track. I used raspberries in this, but I think it would really work with any kind of berry.  My other top recommendation would be strawberry – I actually thought...

Third cheesy recipe in a row?? I promise I’ve eaten things other than dairy lately.  Even if you don’t count Easter candy.  In fact, Friday’s recipe will be vegan and packed full of fruit.  But today, it’s all about cheese.  I had a soup like this a long time ago and crave it all the time.  At this point, I don’t even remember where I got it from, but I know that it was topped with slivered almonds and loaded with spinach. I imagine this is true for most people, but I absolutely hated Swiss cheese when I was younger.  I’m not sure at what point this changed, but now I can’t get enough.  All melty in a grilled cheese, on a veggie burger with sauteed mushrooms – I want...

I hope everyone had a great weekend!  I had Friday off, so mine was extra long (but still never long enough, right?).  I’d like to say I was super productive with my day off, but I basically sat around playing video games, caught up on some TV, and baked a loaf of bread (recipe probably to come if I make it again and remember to take pictures.  It was delicious and crazy easy). With most of my posts, I wouldn’t know that anyone I interact with daily actually reads my recipes, but when I posted my broccoli and cheese stuffed rolls, pretty much everyone I know raved about how delicious they looked and tasted.  I had some left over dough a few weeks ago and was craving something spicy, so...

I have a thing against pre-boiling lasagna noodles.  Most prep work I don’t mind doing, especially if it will make the final product that much better.  But I’ve never really felt found a difference in lasagna texture and the cook time doesn’t change – so why bother?  It doesn’t help that the only time I actually boiled my noodles in advance, I poured boiling hot water all over my hands trying to get the noodles out.  I actually finished making the lasagna before I went to a redi-med, but needless to say, that lasagna really just wasn’t worth it. This lasagna?  Amazing.  Still not worth burning your hand over, but definitely worth the effort of oven roasting the veggies and waiting patiently while it bakes in the oven and fills...

I know I was MIA again on Monday.  I promise I’m not being flaky on purpose!  After being sick all of last week, I went to Chicago for the weekend.  I definitely wasn’t 100% ready for that adventure, but I’d agreed over a month ago to go to this Chive meet up with Josh, so away I went.  We rented someone’s apartment for the weekend so we could feel a little less like tourists and went one some tasty food adventures in our free time.  If you’re ever in Chicago, I highly recommend The Chicago Diner or The Peasantry.  The first is all vegetarian and vegan!  The second also had meaty options but had a huge selection of vegetarian options.  Plus, triple truffle fries that are crazy amazing. Thursday night,...

I know the name of this recipe sounds so weird, but hang in there, okay?  I’m clearly not the best at naming recipes and normally just use descriptive titles.  I’m just not a cutesy person.  I’m not into pink or frilly (shiny is a whole different story!) and coming up with adorable names does not come natural.  I’ll work on it, I promise.   Until then, you’re stuck with sneaky beans. This recipe has been a long time coming for me.  In middle school and high school, the cafeteria served these super delicious peanut butter bars.  They had a fudgey chocolatey top, thick and sticky peanut butter filling, and a firm slightly cookie-like bottom.  I knew I could easily recreate that fattening deliciousness if I loaded up on butter, but I...
